Vegan Nutrition. Eat Well, Live Your Values
Food is personal. It carries our memories, shapes our routines, and gives us an opportunity to express what matters to us. For me, choosing vegan is a daily expression of compassion—for animals, for the planet, and for myself.
But compassion for ourselves needs a place at the table, too. We deserve meals that are nourishing, satisfying, and enjoyable.
As a naturopathic physician and a woman in my seventies working to build strength, I keep returning to a practical question: How can I eat in a way that honors my values and supports the life I want to live?
Build a meal that sustains you
A colorful salad can be a wonderful starting point. Add lentils or tofu, a serving of quinoa or whole-grain bread, and a flavorful tahini dressing, and it becomes a more substantial meal.
I like to think about what I can bring to my plate: protein, variety, flavor, and enough food to feel nourished. Beans, lentils, tofu, tempeh, edamame, whole grains, nuts, and seeds offer plenty of possibilities.
Give protein a regular place
Making protein part of each meal can simplify vegan eating. Try a tofu scramble at breakfast, a chickpea sandwich at lunch, or tempeh with roasted vegetables and rice at dinner. When time or appetite makes eating challenging, a smoothie with soy milk and vegan protein powder can be a convenient option.
Meals should work in your real life. A few dependable favorites can be more useful than an elaborate menu you rarely have time to prepare.
Pay attention to the details
A nourishing vegan diet takes some planning. A reliable source of vitamin B12 is essential, and calcium, iron, vitamin D, iodine, and omega-3 fats deserve attention as well. Individual needs vary; being thoughtful about nutrition is part of caring for yourself.
Make room for pleasure
I want food that I look forward to eating: a warm lentil stew, crisp tofu with a delicious sauce, or a bowl of oats topped with berries and walnuts. Enjoyment helps turn an intention into a way of life.
